1:1 Cooking Sessions:
https://forms.gle/LjAkTjod2fMqb68R9INGREDIENTS:
INGREDIENTS:
2 green peppers seeded and chopped
1 red pepper seeded and chopped
2 cubanelle peppers seeded and chopped
10 ajíces dulces seeded and chopped
2 large onions chopped
2 heads of garlic peeled
2 tomatoes chopped, optional
1 bunch cilantro chopped
1 bunch culantro chopped
1/2 cup Spanish pimento stuffed olives optional
1/2 cup white vinegar
1 tbsp ground oregano optional
INSTRUCTIONS:
Thoroughly rinse all ingredients and use a blender or food processor to blend sofrito in batches.
Start with the onions because they provide a lot of liquid when blended. Add the vinegar, as needed, while blending the rest of the ingredients.
Store sofrito in a sealed container. It will keep in the refrigerator for 2-3 weeks. Freeze any remainder for up to 6 months.

TIPS:
If ajíces dulces are not available near you, use a 1:1 swap by volume using bell peppers or Cubanelle peppers.
Ajíces dulces have a distinct sweet flavor. If using standard bell peppers, you can add sweet red bell peppers or mini sweet peppers.
If culantro is not available near you, substitute with cilantro.
OPTIONAL:
I add tomatoes because my mom taught me to make sofrito this way and I love it. Plus, tomatoes may help with reducing inflammation and lowering cholesterol levels. And they provide key antioxidants like lycopene. If you choose to add tomatoes, make sure to freeze the sofrito to keep it fresh longer.
I add a little vinegar to my sofrito because it helps blend it easier and it also helps preserve it. The acidity also enhances the flavors.
